Cilantro Lime Rice – Super Healthy Kids

Cilantro Lime Rice is sure to become a staple in your kitchen. This easy rice recipe has the freshest ingredients and adds a boost of flavor to any meal!

Ingredients for Cilantro Lime Rice

  • long grain rice – I have found this is the best type of rice to use for this dish because it has an excellent texture for this recipe.
  • chicken broth
  • fresh garlic
  • fresh lime zest and juice – don’t skip out and try to use lime juice from a bottle. Fresh makes this rice taste so amazing!
  • fresh cilantro

How to Make Cilantro Lime Rice

  1. Rinse the Rice: Start by rinsing the rice under cold water until the water runs clear. This helps remove excess starch for a fluffier end result.
  2. Add the Liquid: Pour in the chicken broth. Stir in the salt, butter and minced garlic.
  3. Cook the Rice: You can cook this rice in medium saucepan, or just use your rice cooker. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 18-20 minutes, or until the liquid is absorbed and the rice is tender.
  4. Fluff and Serve: Once rice is cooked, carefully open the lid and fluff the rice. Add lime zest, juice and chopped cilantro. Stir to combine. Serve warm and enjoy!
