Let’s face it; we love being with our family, we love for our kids to be in the great outdoors and we love that camping isn’t crazy expensive. For us Aussies, we’re lucky that we really don’t have to travel far to find a great camping spot making it super budget-friendly. BUT for some of us, camping fills us with dread at the prospect of eating endless boring camping recipes like BBQ’s and bacon and egg rolls!

With so many of you heading off on your school holiday camping trip, we at The Healthy Mummy want to offer you some great ideas to raise the culinary tone from camping to GLAMPING! With some amazing, healthy and simple camping recipes that include camping food ideas for delicious breakfasts, desserts and dinners that you can prepare on the camp stove or bbq (with minimal washing up)!

Healthy glamping recipes perfect for sunset dinners!

For those of you who want to shake up the dinners, try these simple and healthy alternatives to the steak, sausage and chops with stove top options and fancy kebabs from The Healthy Mummy app.

One Pan Creamy Herb Chicken

This is the ultimate one-pan, family-friendly dinner is high in protein to keep you feeling fuller for longer, and it’ll definitely be a glamping recipe favourite because it only takes 10 minutes to prepare!

TIP: If asparagus isn’t in season, you could use any green vegetables of your choice; try baby spinach or broccolini.

Savoury Mince Wraps

These can be done in the camp oven on the fire, and they are so simple to make and have ingredients that can be used for multiple recipes.

Savoury Mince cooking on the camp stove

Ingredients to make 4 serves:

  • 1 tsp extra virgin olive oil (5 mls)
  • 1 brown onion, finely diced (100 grams)
  • 500 grams lean beef mince
  • 1 cloves garlic, crushed (3 grams)
  • 1 small zucchini, finely diced (110 grams)
  • 1 medium carrot, finely diced (70 grams)
  • 400 grams tinned tomatoes salt pepper
  • 4 wholemeal Mountain Bread wrap (100 grams)
  • 1/3 cup reduced-fat Greek natural yoghurt (80 grams)
  • 1 cups mixed lettuce leaves (30 grams)
  • 1/3 cup Sauerkraut (80 grams)

How to prepare the savoury mince wraps on your camp stove:
1. Heat olive oil in a saucepan over medium heat. Add the onion and sauté for a minute or two, until translucent.
2. Add the mince and brown, breaking up any lumps with a wooden spoon.
3. Add the garlic, zucchini and carrot to the pan and stir to combine.
4. Add the tinned tomatoes and break up with a wooden spoon. Season with salt and pepper.
5. Bring to the boil, then reduce to a simmer. Cover with a lid and simmer for 30 minutes.
To serve:
Spread each wrap with some yoghurt and layer with some lettuce and sauerkraut. If using pre-made mince, reheat the meat or take the freshly cooked mince out of your pan and top the wraps with a portion of savoury mince and wrap as per packet directions to serve.
TIP: Leftover mince can be stored in an airtight container in the fridge for 3-4 days

This is a great, family-friendly meal that is easy to prepare and will cost you a lot less to make at home than purchasing pre-made kebabs for your next camping trip.

Tip: If using wooden skewers, soak them in water for 30 minutes to avoid them burning when cooking.

Chicken skewers and mango salad

An easy-to-assemble family dinner that’s perfect to add to your camping recipe arsenal. Marinate the chicken ahead of time if you like, and then just cook and prepare the salad when it’s dinner time.

Ingredients to make 1 serve:

  • 1 tbsp lemon juice (20 mls)
  • 2 tsp tamari (gluten-free soy sauce) (10 mls)
  • 1/2 tsp fresh ginger (2 grams)
  • 150 grams chicken breast fillets
  • 2 skewers (1 grams)
  • 1 cheek mango, unseeded (100 grams)
  • 1/4 red onion (25 grams)
  • 1/4 Lebanese cucumber (50 grams)
  • 5 mint leaves (2.5 grams)
  • 1 tsp sweet chilli sauce (5 mls)
  • 2 tsp lime juice (10 mls)

How to prepare the chicken skewers with mango salad:
1. Combine the lemon juice with tamari and half the finely diced ginger to create a marinade.
2. Dice chicken breast and pour over the marinade and place in refrigerator for 10-15 minutes.
3. Thread marinated chicken onto skewers and BBQ or pan fry for 2-3 minutes on each side until cooked through.
4. Whilst the chicken is marinating, prepare the Mango Salad. Remove the skin and stone from the mango and finely dice. Finely chop the onion, cucumber and mint leaves. Combine in a bowl with the mango.
5. Combine the remaining ginger, sweet chilli sauce and lime juice and pour over the mango salsa.
6. Spoon salsa over kebabs and serve with lime wedges.
TIP: If using wooden skewers, place skewers in chilled water for 1 hour before use to avoid them burning on the barbecue.

This cauliflower pancake recipe is a savoury pancake breakfast that makes 3 serves. Share with the family or store leftovers in an airtight container in the fridge for up to 3 days and reheat as required.

Pancakes in just 15 minutes? Yes, you can with this recipe. Perfect for a delicious, healthy snack or the perfect glamping recipe for breakfast with the family.

Ingredients to make 2 serves:

  • 1 tbsp coconut flour (10 grams)
  • 1 tsp reduced-fat coconut milk (5 mls)
  • 1 free-range eggs (50 grams)
  • 1 tsp coconut oil (5 mls)
  • 1 tbsp butter (16 grams)

How to prepare the Crazy quick coconut pancakes:
1. Combine coconut flour, coconut milk and egg to form a batter.
2. Heat coconut oil in a frying pan over medium-high heat. Add in tablespoons of the batter to form two small pancakes per serve.
3. Cook for 2-3 minutes on each side or until cooked through and golden.
4. Spread each pancake with an even amount of butter and serve two pancakes per person.

Sweet snacks or some more breakfasts would make the perfect camping or glamping recipes for any road trip.

Almond pan-fried bananas

This delicious almond pan-fried bananas recipe is the perfect glamping recipe. It’s a yummy healthy dessert to treat the whole family after a healthy dinner.

Ingredients to make 1 serve:

  • 1 tsp lemon juice (5 mls)
  • 1 ripe small banana (90 grams)
  • 2 tablespoons almond meal (24 grams)
  • 1/4 tsp cinnamon (0.3 grams)
  • 1/2 cup reduced-fat Greek natural yoghurt (130 grams)
  • 1/4 tsp vanilla extract (1.3 mls)

How to prepare the almond pan-fried bananas:
1. Cut the banana into thirds and then in half lengthways. Using a pastry brush, brush them with lemon juice.
2. Combine the almond meal and cinnamon and press the banana pieces in this mixture to coat them.
3. Line a frying pan with baking paper and spray with a little cooking oil spray.
4. Heat pan over medium-high heat. Add the banana pieces and cook them in the lined pan for a minute or two on each side until golden in colour.
5. Combine the yoghurt with the vanilla and serve with the pan-fried banana pieces.

Tools for cooking when camping:

  • Camp stove – gas, of course – with grill plate and rack if possible
  • Table for stove
  • Matches / lighter
  • Firewood / firestarters
  • Axe
  • Both a large and small Frying pan
  • Both a large and small Saucepan
  • Cast iron camp oven – to pop in the fire for any slow cooking you might want to do
  • Foil to keep things warm or pop on top
  • Potholders

  • Cooking utensils – egg flip, tongs, knives, serving spoons, measuring spoons/cups, extendable forks for roasting over the fire
  • Colander – great for washing veggies but also for straining
  • Two cutting boards – one for the meat and one for everything else
  • Bowls for mixing, salad and leftovers

Tip: Stackable bowls with lids are the perfect addition to any camping or glamping trip. You can use them for leftovers on the trip, but they also stack inside each other until you need to use them.

Eating utensils for camping:

  • Melamine plates / bowls – at least one for each person
  • Mugs / cups
  • Cutlery
  • Refillable water bottles
  • Large water jug or water storage container with a tap

Tip: Fill up the large water jug or storage bottle on-site and avoid buying bottles of water

What you need for cleaning when camping

  • Washing up tubs – they can travel inside each other and are great for washing and then rinsing clean
  • Dish rack
  • Dishcloth and scourer
  • Dishwashing liquid
  • Napkins and paper towel
  • Tea Towels and hand towels

Tip: Get the kids to work together to wash up after each meal – make it a tradition
